Cheesecake Swirl Carrot Bundt Cake Recipe


For Easter weekend, I baked a few goods. One of them was this delicious Cheesecake Swirl Carrot Bundt Cake loosely following this recipe

The first thing you will need is to gather all of your ingredients together. And you'll need a few since this recipe requires 3 major steps: the cake, the cheesecake swirl, and the icing. 

Ingredients

For the cake:
  • Box of Betty Crocker Delights Carrot Cake
  • 1 stick of softened unsalted butter
  • 3 eggs
  • 1 carrot (peeled and grated)
  • 1 tsp nutmeg
  • 1 tsp cinnamon 
  • 1 tsp ginger
For the cheesecake swirl:
  • 1 cup softened cream cheese
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup of granulated sugar
  • 2 tbsp All Purpose Flour
For the icing:
  • 2 cups of powdered sugar
  • 1/4 cup softened cream cheese
  • 4 tbsp heavy cream
  • 1 tsp vanilla extract

Instructions

For the cake:
  1. Pre-heat your oven to 350 degrees.
  2. Whisk together your box of carrot cake mix, ginger, cinnamon, and nutmeg. 
  3. Add the eggs 1 by 1. 
  4. Mix together with the shredded carrot and butter.
  5. Pour half your batter into your buttered bundt cake pan. (reserve the other half to pour over your cheesecake swirl)
For the cheesecake swirl:
  1. Using a hand mixer, beat together the cream cheese and sugar until well combined.
  2. Beat in the egg and vanilla extract. 
  3. Gently fold in the flour. 
  4. Spread the mixture evenly over your cake batter, before topping it with the remaining batter. 
  5. Bake for 40 minutes or until the toothpick inserted comes out clean.
  6. Let it cool in the pan for 15 minutes before removing it from the pan and letting it cool completely. 
For the icing:
  1. Beat together the icing sugar, vanilla, heavy cream and cream cheese until smooth. The mixture should be spreadable.
  2. Once your cake has cooled, use a spoon or piping bag to do the design of choice for the cake.
Now your cake is ready to slice and serve!
